Easy Baked Meatballs
These are my easy baked meatballs. This recipe is dairy-free and optionally gluten-free. Trust me, you won't miss either. These have plenty of flavor on their own. You don't need to try to manage these on the stove like many recipes. Simply mix your ingredients and bake in a very hot oven! That's why these are called easy baked meatballs. Done in a flash, these are great for spaghetti and meatballs or even meatball subs. Especially when served with my marinara sauce recipe. Ingredients
  • 1/4 cup onion (grated)
  • 1 tsp beef stock concentrate (or one bullion cube crumbled)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp thyme
  • 1/2 tsp basil
  • 1/4 tsp smoked paprika
  • 45 g vegetable crackers crumbs (I like vans fire roasted veggie crackers)
  • 1 egg
  • 1 tbsp nutritional yeast
  • 3 tbsp tomato sauce (or crushed tomatoes)
  • 1 lb ground beef (I prefer 85/15)
Instructions
  1. Preheat your oven to 450 degrees Fahrenheit. Grate some onion and add to a large bowl.
  2. Add your egg, bullion, tomatoes, spices, and nutritional yeast to the bowl and whisk with a fork.
  3. Put your crackers in a bag and crush them well. Add them to the bowl and mix.
  4. Add the ground beef to the bowl and mix well with your hands.
  5. Shape 12 equal-sized meatballs with your hands and place them on a sheet pan.
  6. Put in the oven on the middle rack. Bake for 15 minutes.
  7. Enjoy!
