Food Processor Date Banana Bread

A delicious date banana bread recipe made in your food processor! Refined sugar and oil-free but still sweet and very moist. This recipe is also dairy and gluten-free, but you'd never guess! You will also need a food scale for this recipe. Freezes beautifully.

Ingredients
  • 2 ripe bananas
  • 9 oz dates
  • 4 oz walnuts
  • 10 floz lite coconut milk
  • 4 floz honey
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 4 oz sorghum flour
  • 5 oz white or brown rice flour
Instructions
  1. Preheat your oven to 350 °F.

  2. Add all of the ingredients to your food processor.

  3. Blend until fairly smooth.

  4. Pour batter into a greased or nonstick bread pan. 

  5. Place in the oven and bake until a toothpick comes out clean, about 45 minutes. 

  6. Enjoy!
