Gluten-Free Vegan Chickpea Blondies

These gluten-free vegan chickpea blondies are delicious! They taste like a cross between maple almond butter and chocolate chip cookie dough, yum! The texture is like a half baked cookie. Totally delicious without being too gooey. Perfect on their own, or warm with a scoop of dairy-free ice cream. I prefer these warm but they’re good cold also! The best part? They’re healthy too!

These are made mostly with fiber and protein-rich chickpea flour and healthy fat packed almond butter. Almonds are chock full of monounsaturated fat. They might reduce your risk of heart disease. To reduce the sugar content, of these blondies they call for allulose instead of sugar! That makes these even better for you. If you can’t find allulose you can substitute erythritol or a granulated monk fruit sweetener. These have about 5 grams of fiber, 6.5 grams of protein, and only 10 grams of sugar each! If these were made with regular sugar they’d have about 34 grams of sugar each. That’s a major difference.

A delicious, healthy dessert. Does it get better than that? Actually, yes. These are also easy and quick to throw together. From start to finish they take under an hour! I recommend storing these in the fridge.

I’ll be honest, I’ve eaten these gluten-free vegan chickpea blondies for breakfast before with a glass of soymilk. The best part is that I didn’t feel guilty about it. And, you don’t have to either (you shouldn’t feel guilty about eating anything, but you know what I mean).

Gluten-Free Vegan Chickpea Blondies

Instructions

  1. Preheat your oven to 350°F and grease a square glass baking dish.
  2. Into a large bowl measure the flax meal, tapioca flour, chickpea flour, allulose, salt, and baking powder and combine with a fork.
  3. Add the vanilla extract and light coconut milk to the bowl and mix well. Let sit for 5 to 10 minutes. Letting it sit for at least 5 minutes allows all of the flours to fully hydrate.
  4. After 5 minutes, add the almond butter and chocolate chips and mix very thoroughly.
  5. Scoop the dough into the pan and spread it out evenly.
  6. Place in the oven and bake for about 33 minutes, or until lightly browned and set most of the way through.
  7. Remove from the oven and let cool for at least 15 minutes before slicing into 8 pieces.
  8. Enjoy!
